| Oasis Industries was formed in Athens, Georgia just one short month ago. This young company got its first chance to solve operations management problems with the local T.J. Applebee's here in Athens. Oasis Industries' mission is to work closely with their clients in order to successfully establish their operations management needs and to alleviate operational difficulties. After discussing with current employee, Andrea Sebestyen and T.J. Applebee's managers, Oasis Industries that the restaurant was having a problem with high food cost, which is contributed to significant amounts of wasted food. The group discussed the potential causes of the problem of high food cost, and after conducting lengthy observations it came up with a few ideas to reduce the waste. Oasis Industries determined that T.J. Appleebee's was having problems with improper order taking, not ensuring product specifications (i.e. weight and measurement of ingredients), and not getting the maximum yield of a product (i.e. not using usable scraps). In order for Oasis Industries to decrease the restaurant's food costs it also had to come up with a few solutions to the problems found. The group decided to focus mainly on the problem of order taking and found that wrong orders were caused by employees not taking the time to ensure that the right order was not entered into the computer. As a result, the wrong order came up on the printers in the kitchen and the food was wasted. Oasis Industries found that keeping tallies on employee errors and implementing a reward system for the employees with the least amount of errors helped reduce the number of mistakes and therefore reduced costs. T.J. Applebee's recognizes that Oasis Industries cannot completely solve their waste problems in merely four weeks, but is grateful for the companies interest and effort. | |
